Rule #1: Adobo cures Everything

This week was a super slow week. I don’t know why, but it felt like getting to Thursday would take forever. On the days that felt super long, I started experimenting with new food combinations. Anyone who knows me, knows me well enough to know that I normally make adobo at least once a week. For those of you who don’t know what adobo is, it is any type of meat marinated in sauce and cooked. You can eat this for breakfast, lunch and dinner. Basically adobo runs in my veins and the veins of every filipino out there. Something came over me and i thought why not put adobo in a sandwich?

Adobo on its own is magical, but I figured putting it in a sandwich might be a level up. Out of all the combinations I created, the adobo grilled cheese sandwich was a favorite. I know that sounds like a lot of flavors going on, but making a sandwich is a science. I realized if I combined cheese with the flavorful adobo, the cheese creates a mild flavor where it doesn’t over power the adobo. I used Pepper Jack cheese to give it heat, but to help calm the slight saltiness of the adobo. Even though adobo can be salty, no shade, but this combo comes second to the traditional adobo and rice.
